Q: How many 2 liters can you make with this? Is it approximately 28?

Spend $84 for the syrup, plus hardware and cylinders. Or go the the grocery store and buy 28 - 2 liter bottles of Diet Coke (the equivalent of what this box makes) for $51.

Q: what is the shelf life of the 2.5 gallon syrup bags?

Sadly, not very long. Syrups like Sprite seem to go bad faster, but if I get three months after I install the box, I feel lucky. For us suckers with a commercial machine in our home, one-gallon bib would be much more convenient for normal family level of consumption.

Q: How can you tell if/when this goes bad?

There is an expiration date. But it usually lasts after that. The artificial sugar breaks down faster than regular sugar. It can start to taste off. Mine usually last a year.
