Why are the ceramic rod guides 25 degrees if the diamond plate guides are 17/20? Doesn't that give the knife a rounded edge?

Another great question!  The 5° angle change provided on the Guided Sharpening System is quite purposeful.  This creates a micro-bevel at the cutting edge for better edge strength and retention.  This angle change is also more forgiving and makes it much easier to sharpen to a keen edge.  On the Guided Sharpening System, you sharpen at 17° and then hone at 22°.  With the optional Upgrade Kit, you can expand your bevel options with an additional guide, sharpening at 20° and then honing at 25°. Is there any maintenance of the sharpening plates, because I have the Spyderco and you sometimes need to clean the rods from metal buildup.

Yes you need to keep the diamond stones clean. If not the build up will lift what ever is being sharpened above the diamonds and you won't be able to sharpen. Know this for a fact, one thing I learned from another woodworker was how to keep the stones clean. First when you sharpen, if you don't mind the mess, spray stones with Windex. This will float the particles and helps with cleaning. When done sharpening I use Lion Translucent White Plastic Eraser ( Link: https://www.amazon.com/Translucent-White-Plastic-Erasers-P-100P/dp/B001U6ZNL4/ref=sr_1_2?crid=32YQ51QOPYU1N&keywords=clear%2Beraser&qid=1651859596&sprefix=clear%2Beraser%2Caps%2C94&sr=8-2&th=1) and work the diamond until the bottom of the eraser comes clean. I use this with all my diamond stones, not just these.

What grit diamond plates comes with this sharpener?

It will come with a coarse 320-grit plate and a fine 600-grit plate.

Question 4

Roughly, For how many knife sharpenings will the diamond plates last before they are worn out?   Say, 20, 100 , 200, 500 or 100??

Difficult question to answer, possibly impossible. Too many variables, experience, blade size, blade type, pressure, how sharp the blades are to begine with, how well you take care of the equipment. I have sharpened nany blades, like probably around 100. I see minimal wear. I do not forsee buying replacements any time soon. Changed 20 blades from 23° to 17° which requires a lot of grinding. I refer to the knives as blades because of size differences. Now as far as my "long" knives like my meat carving knife, I do wish the stones were longer. I have to sharpen them in sections. So my one meat carving knife would count as two because I have to do it in two sections. Bottom line, I really believe that you will get your dollars worth as long as you maintain the equipment. Like keeping the stones clean.
