Would I be able to demonstrate how an app works if I put my iPad under the camera?

For basic demonstration it might be ok but I didn't get good quality with recording mobile screens. You see scan lines in the recorded video and pictures.

No. There is no built in light.

Whether it has a microphone? Or I should use built-in Mac mic?

The IPEVO Point 2 does not have a microphone.

will it work on a 2014 mac mini?

Probably! Works great on other new-ish Macs without needing software.
