Making ham you need to control gain internal 162F with 176F outside - otherwise you will get trash not ham. It can be smoked too but the best result is using the cold smoke process.

Q: Do these need to be soaked before they're stuffed?

Yes. It does need to be soaked for 10-15 minutes before you stuf it.
