Each of the Dante input adapters will take two input-channels and send that as Dante on the network. If you have 8 outputs from your pre-amp then you'll need 4 of these.

Q: How many watts will these pull via poe? any recommendations on compatible injectors?

I'm afraid I can't find any information about how much they draw via PoE, but since these are just micro-controllers I can't imagine it being very high. Any standards-based PoE injector should be good, or PoE switch.

Yes you could, but just FYI there are other manufacturers of Dante-compatible products that make multi-channel (8x, 16x, etc) breakout or stage boxes. If that's what you're looking to do that may be a better solution.
